Japanese Name: Odorikoso
One of the earliest wild plants to sprout in spring is Odorikoso.
This wild herb is known for its sweet, nectar-like fragrance, which attracts bees when it blooms. Many people might remember picking the flowers as children and sipping the nectar while racing against the bees.
The young shoots can be boiled and prepared as ohitashi (blanched greens) or aemono (seasoned salads), making for a delicious dish. Compared to spinach, Odorikoso has less bitterness and can be harvested from early spring, making it one of the wild plants that you’ll want to eat more and more.
